Oottada - a Tamilian roti

This specific roti is cooked on mud dish which has a specific shape.

Take 1 1/2 cup of rice powder. mix it well with water to get a 'not so thin' mixture. add salt. break 1 egg into it. grind again till u get a smooth mix like for appam.

Heat the oottada chatti well on high fire.Pour into the Oottada chatti and flatten it. cover with a lid till cooked.

do not lower the fire.

To prepare the cooking dish (chatti)
pour 'kanji vellam' (malayalam), that is the water you get after draining the rice, into your new ottada chatti. keep for one day. boil it. discard the water. clean with egg shells. its now ready to use. clean it only with egg shells and water. before you cook, always clean with egg shells.

it can be served with chicken curry, mutton curry or egg roast
