We do know that soya chunk is a nutritional food, but not everyone likes the flavor. Check out this easy-to-make soya chunk pancake/dosa for a healthy breakfast recipe.
Pre-prep
-> soak soya chunks in water for 30 minutes. Do not squeeze out all the water.
-> soak rice in water for 30 minutes
Preparation
-> Grind the soya chunks into a thick coarse paste with just a little water.
-> Grind together soaked rice+2 green chilli + 1 inch ginger+ 8-10 garlic + 1 cup Curd.
-> Add in the ground soya and give a quick grind.
-> Transfer to a bowl. Add in vegetables to your choice - carrot, capscicum, onion, tomato, green peas, corn. (1/4 cup each will be fine). Add in coriander leaves, black pepper powder, salt and cumin seeds.
-> Rest for 5 mins or leave overnight to be prepared for the morning.
Get Cooking
-> When ready to cook, add 1 sachet fruit salt -Eno.
-> Pour oil into a hot pan, pour in the batter. Spread out and thick later and cover and cook for 2-3 minutes.
-> Flip the pancake when the top portion is dried. Add some oil to the pan and cook again covered for 2-3 minutes.
-> Soya chunk nutri roasties are ready.
Dip
->Beat 1 cup thick curd
-> Add in grated cucumber ( 1 medium) + 1 green chilli chopped + coriander leaves+ black salt+ 1/4 tsp cumin powder + normal salt. Mix well.
