Papdi Chat


PAPDI PREPARATION

> 2 Cup Maida + 1 tbsp Ghee + 1 tsp Salt + Ajwain  + 1/4 Cup Rava

> Mix & make a dough with water 

> Keep 10 mins

> Roll Out - Cut Papdis. 

> Prick slightly with a fork. Fry in oil. 


IMLI CHUTNEY

> 1/3 Cup Imli Pulp + 1tsp Fennel seed powder + 1 tsp jeera powder + 1 tsp Red Chilli powder+ Chat Masala 

> Add in little water + 1/2 tsp salt + 2tbsp grated jaggery 

> 2-3 minutes on low flame till it thickens 


GREEN CHUTNEY

> 1 bunch Coriander leaf + 1/2 tsp Lemon Juice + a handful Mint Leaf + 1 tsp Sugar + Salt

> Grind in Mixie. Add water if required 


CHICK PEAS CURRY 

> Make your usual white Channa Curry. Or take leftover curry.

> Add Cumin Powder + little Imli Juice


LAYERING PAPDI CHAT 

> Place the Papdis in a bowl. 

> Pour Green Chutney, Imli Chutney, Chick Peas Curry

> Add chopped Onions, Tomato (If required), Chopped Coriander, Beaten Curd and Sev.
