PANCHAMRIT (Indian drink)

Holy Nectar Offered to the GodsNo pooja is complete without panchamrit-a combination of milk, sugar,curd,ghee, honey and tulsi leaves. It is offered to the gods and then to the devotees. INGREDIENTS * Milk - 2tsp * Sugar - 1 / 2 tsp * Curd,whisked till smooth - 1tsp * Pure ghee - 1/4 tsp * Honey - 10 drops * Tulsi leaves(optional) - 4 to 6 METHOD 1) Mix together all ingredients in a bowl. 2) Drink a few drops by pouring into the palm.

Mughlai Dal

INGREDIENTS Split black beans (Dhuli urad dal) - 1 1/2 cups Water - 3 1/2 cups Turmeric powder - 1 tsp Cottage Cheese (Paneer) - 100 gms cut into cubes and fried Black pepper - 1 tsp Green chillies (finely chopped) - 2 C oriander leaves (chopped) - 2tbsp Cumin seeds (jeera) - 1/2 tsp Ginger (chopped) - 2 tsp Small Onion (finely chopped) - 1 Tomato (finely choped without pulp) - 1 Ghee or oil - 4tbsp Salt - to taste Cream - 1/4 cup METHOD Soak Black beans for 1 hour. Boil water with turmeric and salt. Add soaked dal, fried paneer and cook till the dal becomes tender and each grain is separate. Now put dal in a strainer so that excess water may be removed. Keep aside. Fry chopped onion in ghee till it turns light brown. Add ginger and fry. Add jeera and fry for a second and mix with the dal. Add finely chopped green chillies and coriander leaves to the dal. At teh time of serving put the dal in a dish and sprinkle chopped tomato without pulp and then pour the cream over it.

CHICKEN LAJAWAB

Chicken lajawab is an Indo-Pak Chicken curry. It has the spicy touch with ginger, gram masala powder and onion. It is one of the famous diwali dishes in India. INGREDIENTS Cornflour- 1/2 Cup Tender chicken (medium) - 1 Lime - 1 (big) Ginger-garlic paste - 2tbsp chilly pwd - 2 tbsp Finely chopped onion - 1 Garam masala powder - 1 tsp Salt - to taste METHOD 1) Cut Chicken into 8-10 pieces. 2) Wash and wipe dry. 3) Rub the lime over the pieces and pierce the chicken with a fork (to allow masala to penetrate) 4) Mix the ginger-garlic paste, grated onion, chilly powder and gram masala and apply over the Chicken pieces. Allow the Chicagoan to marinate and keep it in the refrigerator for 4-6 hours. 5) Sprinkle the cornflour over the marinated chicken . 6) Deep fry till golden brown. 7) Serve hot with chopped salads and rotis.
